Usage in Foods
Polysorbate 80 is commonly used in many foods such as ice cream, frozen custard, ice milk sherberts, whipped toppings and other frozen desserts. It should not exceed 0.1% of the finished product. Poly 80 is also used as a defoamer in yeast and cottage cheese, a solubilizing and dispersing agent in pickles (maximum usage of 500ppm), to solubilizing and dispersing of vitamins and vitamin-mineral combinations. Polysorbate 80 is also commonly used as a dill oil dispersing agent in canned vegetables.
Polysorbate 80 in Frozen Desserts
Poly 80 is commonly used in ice cream and other frozen desserts where it is used at levels up to 0.5% to increase and improve smoothness and handling on automated equipment. Polysorbate 80 will increase ice cream resistance to melting. This is accomplished by polysorbate 80 preventing the coating of the milk protein on the fat droplets. This will create chains that act as a net. This network will hold the air that was incorporated to provide a firmer texture as the ice cream softens or melts.
Non-Food Uses
Our poly 80 is food grade, however, it can be used as a surfactant in nonfood applications such as soaps, cosmetics, and even a solubilizer in mouthwash. Food grade poly 60 is manufactured to a higher purity level than most cosmetic grades.
